I have had this in a few places and thought it was delicious!<\/p>\n<p><strong><u>What you need: <\/u><\/strong><\/p>\n<ul>\n<li>1 red beet<\/li>\n<li>1 golden beet<\/li>\n<li>Arugula<\/li>\n<li>Honey<\/li>\n<li>Balsamic Vinegar<\/li>\n<li>Goat Cheese<\/li>\n<li>Parmesan Cheese <\/li>\n<\/ul>\n<p><strong><u>How you do it: <\/u><\/strong><\/p>\n<p><em>Cook the beats. <\/em><\/p>\n<ol>\n<li>Peel them, half them, and place them in a pot so they are just covered with water. <\/li>\n<li>Place over medium heat and cook until fork tender. <\/li>\n<li>Remove the beets, let them cool, then cube them. <\/li>\n<\/ol>\n<p><em>Make the balsamic honey reduction. <\/em><\/p>\n<ol>\n<li>Place about 1\/2c of balsamic vinegar in a small pot over medium heat. Add 2-4 tablespoons of honey depending on how sweet you like it. <\/li>\n<li>Reduce until it&#8217;s about 1\/2 of it&#8217;s original volume. Pay close attention here as this might boil over if left alone for too long. <\/li>\n<\/ol>\n<p><em>Make the Parmesan crisps.<\/em><\/p>\n<ol>\n<li>Line a cookie sheet with parchment paper and preheat the oven to 325F.<\/li>\n<li>Take about 1\/2c of Parmesan cheese and make 6 nicely spaced piles on the cookie sheet.<\/li>\n<li>Cook for 8-10 minutes until just slightly browned. <\/li>\n<li>Remove from stove and let cool to become more rigid. <\/li>\n<\/ol>\n<p><em>Assemble it!<\/em><\/p>\n<ol>\n<li>Find a nice plate. <\/li>\n<li>Put a good handful of arugula down. <\/li>\n<li>Sprinkle some cubed beets around. <\/li>\n<li>Flake some goat cheese over the top. <\/li>\n<li>Using a fork, dip the prongs into the reduction then drizzle fancy little lines all over the place. <\/li>\n<li>Take 2 Parmesan crisps and lean them up against each other anchoring them in the bed of arugula. <\/li>\n<\/ol>\n<p><a href=\"http:\/\/blog.familyofgoldsteins.com\/wp-content\/uploads\/2011\/02\/IMG_0353.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; border-bottom: 0px; border-left: 0px; padding-left: 0px; padding-right: 0px; display: block; float: none; margin-left: auto; border-top: 0px; margin-right: auto; border-right: 0px; padding-top: 0px\" title=\"IMG_0353\" border=\"0\" alt=\"IMG_0353\" src=\"http:\/\/blog.familyofgoldsteins.com\/wp-content\/uploads\/2011\/02\/IMG_0353_thumb.jpg\" width=\"433\" height=\"282\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Here&#8217;s an appetizer that I made on Valentine&#8217;s Day.
